How to Cook Cornish Hens on the Grill Rotisserie | Gas Grill



In today’s episode, I’ll show you how to make Cornish Hens with a Rotisserie on a gas grill. Start by brining the Cornish Hens overnight.

Brine Recipe
• 1 gallon water
• 1 cup kosher salt
• ½ cup brown sugar
• 1 teaspoon thyme
• 1 teaspoon Paprika
• 1 teaspoon Ginger
• 1 teaspoon Cardoman
Other Ingredients
• 3 Cornish Hens
• Chicken Seasoning/Rub. I used Bone Suckin’ Seasoning, available here:

After 24 hours, remove Cornish Hens from the brine. Pat dry with paper towels to remove any excess salt. Tie the legs together, then place the Cornish Hens on the Rotisserie Skewer.

Grill Set Up: For a 3 burner grill, turn the center burner off and set the left and right burners to medium heat (temp 350 to 450 F). Also, you can use a smoker box and Maple Wood on one of the gas burners for a smoke flavor.

Put the Cornish Hens on the Rotisserie (over the grill), then season with Bone Suckin’ Seasoning & Rub.

Total cook time will vary, but plan for approximately 1 hour. Cook until Cornish hens reach an internal temperature of 165 F at their thickest points.
